As is our Sunday night custom, we have found another awesome dish for dinner this week. One worthy of sharing with our beloved friends, family, and readers by one of my favorite culinary personalities.

Mascarpone Mini Cupcakes with Strawberry Glaze
Okay, I admit, I actually enjoy cooking with my wife. I think it’s because it gives us a chance to try new things and experiment but also that we’re creating something that will hopefully inspire and satisfy us.

Over the weekend, we had to come up with a dessert that hopefully everyone would love that would feed about 10 people. FoodNetwork.com and Giada De Laurentiis rarely disappoint (despite her apparent compulsion to say all Italian culinary words like ‘mozzarella’ with an mildly over-powered Italian accent) and this was no exception.

Not only is the recipe ridiculously easy, but it was one of those ‘feel free to lick the extra batter off the spoon’ type recipes. It makes 48 easily with some batter left over. Creamy, sweet, and tart. Great for spring!
